You should see your own email listed on your own account preferences tab, yes. Regular users cannot see other users’ preferences, so that stays hidden.
What others can see is basically what you will see if you click on any person’s avatar to call up their card, then click on that to visit their profile page. Feel free to click on mine to see what that looks like.
Moderators and GBX forum/support staff can access a bit more information should they need to, but unless your email is in one of the public fields it is protected.
